Convex Basket Espresso: Why It Changed My Grind, My Flow, and My Shot

I bought the convex basket to find out which one makes better espresso. Two weeks later I think that was the wrong question.

Because the basket itself is not the interesting part. What happens to the extraction around it is.
I started with a simple plan: run the Normcore 58 mm Convex Basket against my Normcore Precision Basket, same beans, same dose, same machine, and pick a winner.

What I got instead was a grinder setting that doubled, a flow curve that went flat, and a shot that tasted like someone had turned down the acidity without actually removing it. This article is my attempt to explain why.

Convex Basket

A standard basket has straight walls and a flat bottom. So does a precision basket, it just has laser-drilled holes with tighter tolerances and a more even hole pattern. Both are wide and shallow.

A convex basket changes the shape of the space the coffee sits in.

The interior tapers. On my Normcore the walls run from 58 mm at the top down to roughly 32 mm at the filter plate.

The coffee does not sit in a wide disc anymore. It sits in something closer to a cone, and with the same 19 g dose that means the puck gets noticeably deeper and noticeably narrower.

That sounds like a detail. It is not. It changes where the resistance in your shot comes from. If you want the longer version of how basket types differ, I wrote a full espresso basket guide that covers OEM, precision and everything in between.

Espresso needs resistance. Without it, water runs straight through and you get brown liquid instead of a shot.

In a normal basket, almost all of that resistance comes from one place: your grind. The bed is wide and shallow, so the only real lever you have is particle size.

Grind finer, get more resistance, slow the shot down. That is why dialing in feels so twitchy on a precision basket. One or two steps too coarse and the shot gushes.

There is a cost to that. To hit 9 bar in a shallow bed you have to grind quite fine, and fine grinding produces fines.

Fines migrate down during the shot, pack into the lower layers, and over-extract while they do it. That is where a lot of the harshness and the dry bitterness in home espresso comes from.

The convex basket moves the job somewhere else.

A deeper, narrower puck resists water by itself. More vertical distance to travel, less cross-section to travel through. The resistance is built into the metal instead of into the coffee.

And once the basket supplies the resistance, you no longer need the grinder to supply it.

So you grind coarser. Not as a side effect. As the whole point.

Normcore says this openly on the product page: the geometry generates the resistance so you can move to a coarser setting and still keep the flow under control. Fewer fines, less local over-extraction, and a bed that holds together better.

The usual fixes for uneven extraction attack the coffee. WDT to break up clumps. A level tamp. A puck screen. A gentle pre-infusion to wet the bed before the pressure arrives.

This one attacks the container.

Everything below ran on the same machine, the same grinder, the same bag of coffee.

Two weeks of daily shots. Same puck prep for both: WDT, level tamp, nothing exotic.

The important part: I did not change the recipe. 19 in, 42 out, 30 seconds. The only thing I allowed myself to move was the grind.

On the precision basket, my dial for this coffee sat at DF64 setting 10.

On the convex basket, hitting the same 42 g in the same 30 seconds required setting 20.

Not 11. Not 13. Twenty.

I re-checked it three times because I assumed I had misread the dial. I had not. Same coffee, same dose, same target, double the number on the grinder.

Convex basket grind size is not a small adjustment, it is a different range entirely. And that single number tells you more about these baskets than any tasting note. The geometry adds so much resistance on its own that I had to take an equivalent amount out of the coffee. Coarser particles, bigger gaps, less resistance from the bed. The two effects cancel and I land back at 30 seconds.

Which also means one thing for your workflow: your existing dial-in numbers are worthless the moment you switch. Do not treat it as a small correction. Treat it as a new coffee.

Worth knowing before you buy: Normcore markets this basket for slow extractions and quotes something around 1 ml/s as the intended flow. I ended up at roughly double that. If you want their profile rather than mine, expect to go further, extend the shot, or both.

This is the point where the gear test turned into something else.

I log every shot in Beanconqueror, so I had both curves next to each other.

Normcore Precision basket:

the flow climbs the entire time.

Slow at the start, quicker in the middle, fastest at the end.

The classic espresso shape, and the one most of us know from a bottomless portafilter.

Normcore Convex basket:

a short peak, then the flow settles at roughly 2 ml/s and stays there. Almost a straight line.

Same 30 seconds. Same 42 g in the cup. A completely different route to get there.

Here is how I explain it to myself.

In a normal basket, all the resistance lives in the coffee, and coffee is not a stable material. It gets wet. It compacts. Fines wash downward. Channels open. So the resistance changes throughout the shot, and the flow changes with it. That rising curve is the puck slowly giving up.

In the convex basket, most of the resistance lives in the shape of the basket, and the shape does not change. Steel at second 5 is steel at second 25. Whatever the puck does on top of that only modifies a smaller share of the total.

The coarse grind helps in the same direction:

→ bigger gaps between particles
→ water spreads instead of hunting for shortcuts
→ the bed holds its structure
→ resistance stays where it started
→ the flow stays where it started

Fixed resistance plus a stable bed. A flat line.

One honest note: this fits my data, but it is a hypothesis, not a proven mechanism. I measured what came out of the basket. I did not look inside the puck.

The taste part is the one I trust the least and enjoyed the most.

The convex shots were calmer. Rounder. The acidity of a washed Ethiopia at medium-light roast usually announces itself. Here it did not.

My first instinct was: the convex basket reduces acidity.

I no longer think that is true. I think the acidity is still there. It just stops standing alone.

Think of a band. If only the singer is loud, her voice sounds shrill. Add bass, drums and guitar at the right level and she sings the exact same notes, but now they sit inside something.

Nothing was removed. The balance changed. That is what a more even extraction does. Sweetness, bitterness and body arrive more uniformly, so the acidity has company. And with fewer fines in the bed, less of the harsh over-extracted material makes it into the cup in the first place.

Does that cost clarity? I honestly cannot say yet. Two weeks, one coffee, one machine is not enough to claim anything about flavor separation. What I will claim: the convex basket gave me a more forgiving shot, not a more detailed one. Those are different goals.

Worth noting, because it lines up: Normcore does not sell this basket with a promise of better espresso. They talk about resistance through geometry, a coarser grind, fewer fines and better repeatability. That is exactly what I measured. Nobody promised me a flavor miracle, and I did not get one. I got consistency.

  • Bigger sweet spot. A grind that would have choked or gushed on the precision basket still lands somewhere usable.
  • Repeatable flow. A flat flow curve means shot to shot variation drops, because there is less runaway behavior to amplify small prep errors.
  • Kind to cheaper grinders. Entry-level burrs struggle at the very fine end. This basket lets you work in the range where they are actually good.
  • Forgiving with puck prep. My worst-prepped shot on the convex basket was still drinkable. That is not something I can say about setting 10 in the precision basket.
  • Great match for light and medium-light roasts, where aggressive acidity is the usual failure mode.
  • Coarser grind. Less clumping, easier distribution, fewer fines, and less strain on the grinder.
  • Every existing dial-in is void. Doubling the grind setting is not a tweak.
  • It does not fix bad distribution. It hides it. Those are not the same thing, and if you never learn puck prep, you never learn puck prep. My puck prep guide still applies.
  • Possible cost in separation. More even extraction can mean a more blended cup.

These are starting points, not laws. My numbers, my machine, my coffee.

If you switch, start well coarser than your current setting and expect to keep going in that direction.

Symptom: the shot gushes and finishes in 15 seconds.
Cause: your dose is too low for the basket, so the puck is not deep enough to use the geometry. Fix: check the dose first, then the grind. In a tapered basket, dose changes puck depth much faster than it does in a flat one.

Symptom: the shot chokes and barely drips.
Cause: you kept your old grind setting. This is the most common mistake, because the instinct when a shot runs slow is to reach for a finer setting. Fix: go coarser, and go further than feels reasonable. I needed a full doubling.

Symptom: heavy spritzing from a bottomless portafilter.
Cause: at a coarse grind, an uneven bed shows up immediately. Fix: WDT properly and tamp level. A tapered basket is less forgiving of a tilted tamp than a flat one, because the narrow bottom concentrates whatever unevenness you leave behind.

Symptom: flow starts at 2 ml/s and then climbs anyway.
Cause: you are still too fine, so fines are still migrating and the bed is still eroding. Fix: coarsen one more step before touching anything else.

Symptom: the shot tastes flat and hollow, not harmonious.
Cause: you went too coarse and are now under-extracting at the same shot time. Fix: this is the real limit of the wider sweet spot. Wider is not infinite. Back off two steps and extend the yield slightly, for example 19 in, 45 out.

Symptom: dry grounds in the center of the puck after the shot.
Cause: distribution, not the basket. Fix: more WDT, and make sure your grinder is not dumping a mound into the narrow part. Coarse coffee looks evenly spread when it is not.

I set out to find the better basket. I found a different extraction.

A coarser grind. Fewer fines. A flow that stays where it is because the resistance is built into the steel instead of the coffee.

That combination gave me an espresso that is more harmonious and considerably more repeatable. Whether it is objectively the better espresso, I cannot say. For this coffee, on this machine, it works.

Maybe that is the actual innovation of convex baskets. Not that they make better espresso. That they take the hardest variable out of your hands.

A basket whose interior tapers instead of running straight down, on my Normcore from 58 mm at the top to around 32 mm at the filter plate. The same dose forms a deeper, narrower puck, and that shape creates flow resistance on its own instead of relying on a very fine grind.

Yes, and by a lot. On my DF64 the setting moved from 10 to 20 for the same 19 g dose, 42 g yield and 30 second shot. Because the basket supplies resistance through its shape, you have to take resistance out of the coffee to compensate.

In my experience it does not remove acidity, it balances it. Sweetness and body extract more evenly and the coarser grind produces fewer fines, so a bright washed Ethiopia stops feeling sharp without losing its character.

It depends on what you want. In my two weeks of testing, the convex basket gave me more consistency and a wider sweet spot. The precision basket is still the tool for people who want to chase the last bit of separation in the cup. Neither is objectively better, they optimise for different things.

It fits standard 58 mm portafilters, including my Sage Dual Boiler. Two things to check before you buy: whether your machine has enough headspace for a deeper puck, and whether your tamper reaches the narrow bottom.

Yes. The basket makes bad puck prep less catastrophic, it does not make it irrelevant. Uneven distribution still shows up as spritzing and a hollow shot.

Plan for a full bag. Because the grind range shifts so dramatically, your muscle memory works against you for the first day or two.
